Whats in the bottle..?

We believe that we should  be totally transparent about how we grow our grapes and how the wines are made.

In fact as a consumer we feel that you have the right to know exactly how your food and drink were grown and processed into the product you purchase and consume.

In a very short space of time we have begun to understand the damage that we have done to our planet and our own health outcomes by growing our food and drink in a way that uses synthetic chemicals and or intensive industrial farming methods.

The use of these products are harmful to both ourselves and our planet.

Amphora Solaris 2024:

Whole bunch pressed on harvest day, settled for 24 hours then racked into tinajas via gravity.

Natural spontaneous fermentation.

In springtime the wine went through an unblocked natural malolactic fermentation.

The must was stirred on gross fermentation lees regularly according to tasting.

Racked to tank after 12 months and bottled by gravity without any additions.

Unfiltered and fined by gravity alone.

This wine contains nothing other than grapes.

A Zero-Zero wine no intervention in the vineyard and no intervention in the winery.

A pure, raw, unadulterated taste of place.

Amphora Rondo Rosado 2024:

Whole bunch pressed on harvest day, settled for 24 hours then racked into tinajas via gravity.

Natural spontaneous fermentation.

In springtime the wine went through an unblocked natural malolactic fermentation.

The must was stirred on gross fermentation lees regularly according to taste. Fined by gravity. Racked to tank after 12 months and bottled by gravity with a micro sulphur dose.

Free sulphur 15ppm.

No other additions were made at any time.

Unfiltered and fined by gravity alone.

These “forever chemicals” do not break down in the environment or the human body, accumulating over time and potentially causing severe health issues such as hormone disruption, weakened immunity, and increased risks of cancer.

Additionally, conventional winemaking often relies on up to 60 different additives (UK)—many of which don’t need to be declared on the label. These additives can include laboratory yeasts, synthetic dyes, animal products, flavouring agents, preservatives, and even substances to alter texture or appearance. While they may enhance certain aspects of the wine’s production or shelf life, they can pose risks to human health, contributing to inflammation, allergic reactions, and long-term chemical buildup in the body.
