Natural Ferment starts...

It's brilliant, our low/zero intervention white grapes Solaris have been pressed very slowly, thanks to David Morris of Mountain People Wine in South Wales and after just a few days the natural fermentation process has begun.

This means that the yeasts which collected on the grapes in our vineyard have started to feed on the natural sugars which have developed in the grapes during the fruiting cycle.

So far, so good, in terms of our aim to make a low intervention wine here in Wales. No additions required and with the start of our own natural ferment, hopefully no need for laboratory born winemaking killer yeasts which have nothing to do with our vineyard, so has no part of our terroir.
